Beef Stroganoff
Serves: 4
Ingredients:
400g rump steak
1 tbsp sunflower oil
1 onion finely chopped
200g mushrooms sliced
1 tsp paprika
2 tbsp sundried tomato pure
200ml beef stock
6 tbsp reduced fat creme fraiche
Method:
1. Cut the steak into strips. Heat the oil in the pan and add the onion and and fry until tender, then add in the steak. Fry for a further 4-5 mins.
2. Add the mushrooms, paprika, tomato puree and stock and bring to the boil. Simmer for 20mins, adding more stock if needed.
3. Finally stir in the creme fraiche and heat through.
4. Serve with boiled brown rice, wholemeal spaghetti or in a jacket potato - just add in the calories extra.
